Well last week got a bit off track. A surprise recruiting trip mid week, leftovers from Super Bowl Sunday and a dinner Thursday for Cub Scouts left my menu with need for revision. I still made the BBQ pork in the crock pot for dinner Monday, froze half of it and then we had leftovers on Tues, pasta w/broccoli (spaghetti squash pasta for me) on Wed, Cub Scouts dinner Thurs and Fri we had homemade pizza. Pizza actually has been on the menu each week, but due to leftovers we haven't had it in 3 weeks. The kids were really wanting some, and with coach away at yet another recruit event I only had to make one pizza. All this to say, I'm recycling a few recipes for this upcoming week!
Sunday: Baked Drumsticks, mac and cheese, salad, broccoli
Monday: Chicken Spaghetti, salad, corn bread
Tuesday: Turkey Burgers, orzo pasta, green beans
Wednesday: Oven Baked Fajitas, chips and queso, salad
Friday: chicken fried rice, cream cheese wontons, salad
Saturday: Cub Scout party dinner
Game Plan: Sunday morning, pull out drum sticks, turkey burgers and 5 chicken breast to thaw. Sunday evening, bake off drum sticks, make mac and cheese and broccoli
While drum sticks are baking, make chicken spaghetti (less chicken) and set aside. Dice and cook through 2 additional chicken breasts for friday, prepare oven fajitas, prepare turkey burgers, prepare large salad to eat off all week.
During dinner, roast turkey burgers and bake oven fajitas, make orzo pasta and rice for fried rice.
After dinner shred up leftover drum sticks for chicken spaghetti. **reserve all drum stick bones for homemade chicken stock, add leftover broccoli to rice and mixed veggies and onion for fried rice and put in freezer.
after dinner place all bones and ingredients in crock pot and make stock to freeze.
Monday: corn bread, warm through casserole
Tuesday: steam green beans
Friday: defrost chicken fried rice, right before serving "fry" rice in pan and add soy sauce. Make scrambled egg to add, serve warm. Warm through cream cheese wontons.
