Oatmeal Almond Butter Muffins



Looking for a quick breakfast option that is healthy and hearty?


I love this recipe!  Below is the link for the original source, below are my adjustments.


my adjustments:

Almond Butter Chocolate Chip Baked Oatmeal
2 cups rolled oats
1/3 cup almond butter
2 ripe bananas smashed (you can also use 1/2 cup applesauce or plain yogurt, canned pumpkin)
3 T maple syrup
1 tsp vanilla extract
2-3 T milk (I used almond milk)
1/4 cup mini chocolate chips (or dried fruit like cranberries)
**optional, add 1 T of chia seeds.  If you add these let batter sit for a few minutes to see if additional milk is needed to keep batter moist.
**optional, add 1-2 T wheat germ

Preheat oven to 350
Mix all the dry ingredients in one bowl. Mix wet into another. Add wet to dry and mix well. Grease a muffin tin and spoon batter into each cup until it is about 3/4 full. I used regular muffin tins.  I got 9 one time, 12 the other. Bake in the oven for 15-18 minutes.

These muffins freeze really well!
