Pork Burgers and Marinated Eggplant

I made pork burgers the other night and they were SO great!  I did make a few adjustments:


  1. Mix all of the ingredients in a bowl.  Let the mix refrigerate for at least 30 minutes.  Then press the mixture into patties (I make 4 of them).

As a side dish we grilled some eggplant.  I made a quick marinade with balsamic vinaigrette/olive oil/garlic and some fresh oregano. Sliced the eggplant (skin on) about 1/4 inch- soaked it in the marinade for about 15 min, then threw it on a hot grill for 15 minutes (flip one time)- once off we sprinkled it with a little italian blend cheese (original recipe called for asiago)
