Christmas always involves brunch for us at some point. I love this recipe!
Make these muffins the day before. Let the muffins cool for 15 minutes, then place in a plastic container and refrigerate. In the morning warm an egg muffin in to microwave for breakfast.
6 large eggs (or egg beater equivalent)
1/4 tsp salt
Dash of black pepper
1/2 c shredded cheese
1 C veggies finely chopped (spinach, mushroom, carrot, broccoli, peppers, onion)
1 Spray muffin pan with non stick spray
2 break eggs into a large bowl, add s&p, beat well
3 divide veggies into 6 muffin cups, top with cheese
4 pour egg mixture into each muffin c until each is 3/4 full
5 bake 375 degrees oven for 25-30 min or until muffins have risen, eggs are set and light brown.
