When cooking for a crowd I often look for recipes that take just a few ingredients and are filling! This week I made fruit cobbler for our players with the short cut of pancake mix! This mix (which was given to me) is a water only mix. I took 2 bags of frozen fruit for each cobbler.
Cobbler 1 was strawberry rhubarb, Cobbler 2 was peach.
3 C pancake mix
1/4 c sugar
1 stick softened butter or margarine
extra sugar (and cinnamon for peaches) to sprinkle on fruit.
Take the fruit and spread in one layer in the bottom of the dish. Sprinkle on sugar to flavor. In a separate bowl combine pancake mix, sugar and cut in butter until pea sized. Sprinkle mixture on top of fruit and bake at 350 degrees until golden brown and bubbly. You could also add some quick cooking oatmeal to this mixture, cut 1 C pancake mix and replace with oats.
The best thing about cobbler is that is can be served room temperature!
