Satay Chicken Pasta 2 ways

I love Trader Joe's! One of my favorite quick recipes from there is the following:

1 bag of whole wheat pasta
3/4th-1 bag broccoli slaw
1 bottle Peanut Satay dressing
chicken breast (about 1 lb)
honey roasted peanuts

Brown up the chicken while cooking pasta. Combine pasta, broccoli slaw and chicken, top w/sauce and toss. When you go to serve it add peanuts.

NOTE: Although this recipe received rave reviews, I think adding bean sprouts or green onion would make it even better! :)

Those of you who don't have a Trader Joe's near by, or like me need to drive an hour to get to one, I have a Satay Sauce that is simple and quick to make:



  • 1 cup reduced-sodium chicken broth
  • 3 tablespoons creamy (or crunchy) peanut butter
  • 2 tablespoons reduced-sodium soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon hot chili oil, or more to taste (leave this out for mild sauce)
  • 2 tablespoons chopped fresh cilantro leaves

In a small saucepan, whisk together the broth, peanut butter, soy sauce, sesame oil, and chili oil. Set the pan over medium heat, bring to a simmer, and let simmer for 5 minutes. Remove from the heat and stir in the cilantro. Let cool to room temperature, then store in a plastic container in the refrigerator for up to 1 week or in the freezer up to 3 months.
