Cheesecake is a staff favorite and with limited fridge space I opted to try this 9x13 recipe instead of making 2 round ones. I used lime juice instead of lemon because I didn't have any (sensing a theme anyone?) but regardless it got rave reviews and was super simple.
- 3 (8 ounce) packages cream cheese, softened
- 2 eggs
- 3/4 cup sugar
- 1 teaspoon vanilla
- 1/2 teaspoon lemon juice
