Homemade Flour Tortillas

This weekend some girlfriends and I got together and made homemade tortillas. I made them a long time ago when a football player from California was living with us. His mother came for a visit and brought her own rolling pin which was actually just a pipe. Anyway, they were amazing. I begged for the recipe and tucked it into my recipe box never to be seen again, until now.

3 c flour
2 tsp baking powder
1 tsp salt
3 T oil (we used vegetable oil)
1 cup hot water

Knead dough, you may need to add a little extra flour or water. Cook on hot griddle turning once when full of bubbles.

We made 3 batches of tortillas. We did one batch all purpose flour, one just whole wheat flour, and one batch combo 1/2 and 1/2. My personal favorite was the all purpose, but will probably do the 1/2 and 1/2 just to be on the healthier side. :)

We had to work a little on the rolling, if rolled to thick they can look like gordita bread. If to thin, they were hard to get to the griddle. Over all, this is a really fun 2 person (or more) project, but can be done alone :)
