Balsamic Roasted Pork Tenderloin

Balsamic Roasted Pork Tenderloin
Robin Miller Quick Fix Meals

One 2 lb pork tenderloin trimmed

salt and pepper 

1/8 c balsamic vinegar
1 T honey
1 T dijon mustard
1 tsp chopped fresh thyme (I used 1/2 tsp dried)

Preheat oven to 400 degrees.

Coat a shallow roasting pan with cooking spray.  Place the pork in prepared pan and season with salt and pepper.

In a small bowl whisk together the vinegar, honey, mustard and thyme.  Spoon over pork then roast until instant read thermometer inserted into the thickest part reads at least 160 degrees F (about 45 minutes basting every 15 min if possible.)

Let rest 10 min before cutting.
