Red Rice and Beans

2 C dried small red beans
1 tsp olive oil
2 c chopped onion
3 cloves garlic
10 c water
1 T cajun seasoning
2 bay leaf
3 c rice cooked
green onion chopped

Prepare Beans
Heat onion and saute with garlic.  Stir beans, water, seasonings.  Bring to boil, reduce heat and simmer until sauce thickens.  Serve over rice with green onion.

Freezes well.
