Dude Ranch Chicken

  • This is one of my all time favorite cooking for a crowd recipes.  It's actually not to unhealthy if you use 
  • 98% fat free soup and fat free cheese, since these guest won't be watching their wastelines, I won't worry about light cheese. :)

  • 2 ½ cups chicken breast, cooked and cubed
  • 2 cups cheddar cheese, shredded
  • 1 can cream of celery soup (reduced calorie)
  • 1 can cream of chicken soup
  • 1 can rotel
  • 8 ounces diced green chilies, mild
  • ¾ cup green onion, sliced
  • 12 flour tortillas

CoCombine all but 1 cup of cheese and tortillas.

Cut tortillas into 6 triangles each. Reserve 12 triangles. Mix rest into chicken mixture and put in 9x13 pan.

Bake uncovered 30 min. Place tortillas around edge of pan and rest of cheese on top. Bake until golden and bubbly.
