My Bible Study is reading a book called Fresh Brewed Life. I'll be reviewing it at the end of the 9 week study. But, every chapter has a coffee recipe in it. I'm hoping to try all of them. This week was the first. It's called a Coffee Mallow Parfait.
24 regular-sized marshmallows (about 3 cups)
1 cup double-strength coffee
1 cup whipping cream, whipped
1/2 cup chocolate cookie crumbs
In a medium saucepan combine the marshmallows and the coffee. Cook and stir over medium heat until marshmallows melt. Cook and stir over medium heat until marshmallows melt. Chill until partially set. Fold the whipped cream into the mixture. In parfait glasses, start with the coffee mixture and layer the mixture with the cookie crumbs. Chill again until serving. Just before serving, add more whipped cream.
I adjusted the recipe slightly. I used cool-whip free instead of whipping cream and used a 100 calorie pack of chocolate cookies.
Verdict: This was really good, but REALLY rich.
